Fig Jam

Ingredients (for 1 jar of fig jam)
- 23 figs (300 grams)
- 2 cups sugar
- 25 cups water
- A few drops of lemon juice
- 20 cloves (optional)
- Grated peel of 20 oranges (optional)
Preparation Steps
1.Preparing the Figs:
- Wash the figs.
- Cut off the stems and pierce the bottoms with a knife.
2.Blanching the Figs:
- Boil water in a large pot.
- Add the figs to the boiling water and boil for 10 minutes.
- Remove the figs with a strainer and place them in cold water. This process is called "blanching" and helps make the figs shiny like crystal.
- Drain the figs from the cold water and place them in another batch of cold water. Repeat this process 2-3 times to remove the bitterness from the figs. After the final blanching, taste a fig to ensure there's no bitterness. If there's no bitterness, proceed to the next step.
3.Preparing the Figs for Jam:
- Take each fig in your hand and gently squeeze out the water without crushing the fig.
- Insert one clove and a little grated orange peel into the pierced bottom of each fig.
4.Making the Jam:
- In a pot, add the sugar and water. Add a few drops of lemon juice and boil for 10 minutes.
- Add the prepared figs to the boiling sugar water.
- Boil over medium heat for 20-30 minutes.
5.Finishing the Jam:
- When the jam starts to foam and the figs become transparent, turn off the heat.
- Let the jam sit overnight. The next day, you can jar the jam. Alternatively, you can jar the jam while it's still hot and turn the jars upside down to create a vacuum seal.
